Administrators Pompeii Posted February 11, 2006 Author Administrators Share Posted February 11, 2006 CABBAGE ROLL CASSEROLE 1 Large head of cabbage 1 - 1 1/2 pounds of ground beef (or meat loaf mix) 2 cups cooked instant or minute rice 2 - 26 oz cans of Tomato Sauce or Diced Tomatoes butter salt & pepper onion powder garlic powder Begin by chopping the cabbage into bite size chunks. In a large frying pan or a dutch oven, add enough butter to cover the bottom and then some. Fry the cabbage until it is tender, but not too mushy. When done, put in a large bowl and hold for later in recipe. Using the same fry pan or dutch oven, fry ground beef until cooked!! Cook rice as directed. Mix meat and rice together adding salt, pepper, onion powder, garlic powder & some of the tomato sauce to moisten the mixture. In a 13X9 casserole pan, cover the bottom with tomato sauce, (I like to put about 1/4 inch) then layer cabbage, meat & rice mix, and tomato sauce until pan's full. Bake at 350 degrees for about 45 minutes to an hour

Guest
This is even better as leftovers after the flavors have had a little time to mingle. I use a bag of frozen spinach, it makes a bigger casserole. If using a bag, I would say this serves 8. SPINACH CASSEROLE 1 box frozen chopped spinach, cooked & drained 1 can cream of mushroom soup 1 tbsp. minced onion 1/4 c. melted butter 3/4 c. grated cheese 1 beaten egg 1 c. Pepperidge stuffing mix (reserve 1/3 c. for topping) Mix all ingredients (except 1/3 cup stuffing mix). Place in a greased casserole. Sprinkle with reserved crumbs and bake for 30 minutes in a 350 degree oven. Serves 5-6.
Guest
For the above, the recipe didn't state what kind of cheese to use. I recommend Parmesan.

Guest snellma
Pierogi Stuffed Shells - You can do this with lasagna noodles also. Put a layer of melted butter and onions, then a layer of lasagna noodles, then a layer of potato/cheese mixture, butter and onion, noodles, potato/cheese, etc. Cover with foil and bake. Line the bottom of the oven because it will boil over. Talk about good, but talk about rich!!!

Victoria
Bean-N-Beef Crescent Pie Ingredients * 1 1/4 pounds ground beef ( I used 1 lb.) * 1 (1.25 ounce) package taco seasoning * 1/3 cup salsa (whole cup) * 1 (8 ounce) package refrigerated crescent rolls (used 2) * 4 ounces cream cheese, softened (not very much of this) * 1/2 cup refried beans (whole can) * 1 cup shredded Mexican blend cheese or Cheddar cheese Directions 1. In a large skillet, cook the beef over medium heat until no longer pink; drain. Add taco seasoning and salsa; simmer, uncovered, until thickened. Meanwhile, unroll crescent roll dough. Press onto the bottom and up the sides of an ungreased 13-in. x 9-in. x 2-in. baking dish; seal perforations. Spread cream cheese over the dough. 1. Stir the refried beans into beef mixture. Spoon over cream cheese layer. Bake, uncovered, at 375 degrees F for 20-25 minutes or until crust is golden brown. Sprinkle with cheese; bake 5 minutes longer or until the cheese is melted. I baked the crescent rolls first before adding the filling so they wouldn't get soggy. I know we don't care for cooked cream cheese that much so I only added a really fine layers. Otherwise we just followed the adjustments above.
