Pineapple Whip

 

2 20 ounce cans Dole crushed pineapple with juice

2 tablespoons lemon juice

2 tablespoons lime juice

1/3 cup sugar

1 and 1/2 cups heavy whipping cream, whipped

 

Drain pineapple; reserve 2 tablespoons juice. Set aside. Place pineapple, lemon juice, lime juice, sugar and reserved pineapple juice in blender or food processor container; cover and blend until smooth. Pour into two 1-quart freezer zipped bags and store bags flat in freezer. Freeze 1-1/2 hours or until slushy. Stir pineapple slush gently into whipped cream until slightly blended, in large bowl. Return to freezer until completely frozen, about 1 hour and serve.

Peach Lemonade

 

4 cups water

2 cups coarsely chopped peaches

3/4 cup sugar

1 cup fresh lemon juice (about 6 lemons)

4 cups ice

1 peach, cut into 8 wedges

 

Preparation:

 

1. Combine the first 3 ingredients in a medium saucepan over medium-high heat. Bring to a boil; reduce heat, and simmer 3 minutes. Place peach mixture in a blender; let stand for 20 minutes. Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. Place a clean towel over opening in blender lid. Blend until smooth. Pour into a large bowl. Refrigerate for at least 3 hours.

2. Press peach mixture through a sieve over a bowl, reserving liquid; discard solids. Stir in lemon juice. Place 1/2 cup ice in each of 8 glasses. Pour about 2/3 cup lemonade into each glass; garnish each glass with 1 peach wedge.

Does anyone have a recipe for a good punch for a bridal shower?  Would like to have it pink in color since the wedding colors are pink & brown.

Cannot use pineapple in the punch because of an allergy.  Thank !

Cosmopolitan (Cosmo)

 

2 parts rum

1 part triple sec

1 part cranberry juice

1/2 part lime juice

 

Pretty pink color

 

Warning! I made a large batch (1 part= 1 liter) for a hen party that my wife hosted. When I came home about an hour after the party started, I was afraid to go down stairs due to all of the cackling and later discovered that the ladies had raided my cigar humidor.

Pumpkin Keg with Witches' Brew Cocktail

This spooky drink dispenser is seasonal, flavorful and functional. It makes the perfect centerpiece for a Halloween party or any autumn get together.

You can use it to serve up your favorite pumpkin-flavored beer, cocktail or a non-alcoholic brew! 

 

Ingredients

  • For the Pumpkin Keg

    • 1 very large pumpkin, at least 12" diameter
    • Plastic keg tap
    • Pumpkin kit with carving tools
    • Apple corer
  • Witches' Brew Cocktail

    • 1 part pumpkin spice vodka
    • 1 part apple cider
    • 1/2 part club soda
    • Splash of lemon sour mix

Preparation

For the Pumpkin Keg:

1. Use a pen to draw a circle around the top of the pumpkin. This will make it easier to trace your lid.

2. Using a serrated knife (or a knife from a pumpkin carving kit), cut off the top and remove all seeds and innards and set aside. You can save the seeds to bake them up later.

3. Use a metal spoon to scoop out the remaining innards from the pumpkin.

4. Rinse out the pumpkin thoroughly.

5. Determine the best front face for your pumpkin (ideally an area with the fewest scratches) and determine where to place your tap. This should be at least a couple inches from the bottom of the gourd.

6. Using an apple corer, create a hole in the pumpkin for your tap and remove the small piece of pumpkin shell.

7. Place your tap into the pumpkin and screw on the back inside to secure it in place.

For the Witches' Brew:

In a large pitcher, combine all the ingredients and stir gently.

To serve:
