Ham Glaze

 

1 20 oz can crushed pineapple with juice

1/2 cup packed dark brown sugar

1 Tablespoon corn starch

2 Tablespoons prepared yellow mustard

1 Tablespoon apple cider vinegar

 

Mix together in a saucepan and bring to a boil. boil 1 minute. Spoon over ham after ham has been in the oven about 1/2 hour at 350 degrees. Continue basting ham with the sauce every so often, making sure glaze does not burn. Cook ham as long as you normally would. Tasty. I came up with this recipe on my own, combining several ideas from the internet.

Ham Loaf

2 pounds ground ham

1 1/2 pounds ground pork

2 eggs

1 cup dried bread crumbs

1 cup evaporated milk

1/8 teaspoon salt

1/8 teaspoon ground black pepper

1 cup brown sugar

1 tablespoon mustard powder

1/4 cup cider vinegar

1.Preheat oven to 350 degrees F (175 degrees C).

2.In a large bowl, combine the ham, pork, eggs, bread crumbs, evaporated milk, salt and ground black pepper. Mix all together well and form into a loaf. Place loaf into a lightly greased 9x13 inch baking dish.

3.Bake at 350 degrees F (175 degrees C) for 90 minutes.

4.While the loaf is baking, combine the brown sugar, mustard powder and vinegar. Mix well and pour over the loaf in the final 15 minutes of baking.

Stuffed Pork Chops on the Grill recipe

 

4 pork loin chops, cut 1 1/2 inch thick

1 (6 ounce) can orange juice concentrate, thawed

1/4 cup water

2 tablespoons vinegar

1 tablespoon vegetable oil

2 bay leaves

1/2 teaspoon allspice

1/4 teaspoon onion powder

1/2 cup prepared mincemeat

1/2 cup finely chopped apples

1/4 cup finely chopped onion

 

Cut lengthwise slit in the side of each pork chop, being careful not to cut through the top, bottom, or sides. Arrange chops in shallow baking dish.

 

Combine next 7 ingredients in saucepan. Bring to a boil over high flame, stirring constantly.

Reduce flame; simmer 1 minute. Pour mixture over chops and refrigerate 8 hours or overnight, turning once.

 

Combine mincemeat, apples, and onion.

 

Remove chops from marinade. Reserve marinade. Press 1/4 cup apple mixture into each pork chops and secure edges with toothpicks. Heat gas grill. Cook chops with cover down on low setting 45 minutes or until done, turning

once. Baste occasionally, with reserved marinade.

 

Makes 4 servings.

This recipe makes a huge batch.  I always canned it in the past to keep it fresh.  It's called a bbq sauce but it's a marinade and it's nice to swab on as cooking as well.  All the acid in this recipe helps to break down the tough muscle and make the meat more tender.

 

Pride of Deer Camp BBQ Sauce

 

1 1/2 cup dark brown sugar

1 1/2 cup Worcestershire sauce

1 1/2 cup prepared mustard

1 quart ketchup

1/2 cup crushed red pepper flakes

3 quarts red wine vinegar

2 quarts water

1 quart white wine

1 1/2 cup salt

 

Combine in 12 quart stainless steel pot and bring to a boil.  Reduce to low simmer, cover and cook for 30 minutes.
