We make those often in our house. The kids love them. I have a recipe book at home that has all the different recipes you can do with a cake mix. Very yummy! I found this one online: CAKE MIX COOKIES 1 pkg. dry cake mix 1/2 c. butter, softened 1 tsp. vanilla 2 eggs Mix all ingredients. Drop by teaspoonful on ungreased cookie sheet 2-inches apart. Bake at 350 degrees for 12-15 minutes. Cool on cookie sheet 1 minute, then remove to wire rack. NOTE: If using yellow cake mix, decrease butter to 1/3 cup. Yield 3 dozen cookies. woodseya1 Posted August 2, 2010 Share Posted August 2, 2010 Zucchini Cookies 1 cup grated zucchini 1 cup granulated sugar 1/2 cup shortening or butter 1 egg 2 cups flour 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 3/4 teaspoon baking powder 1/2 teaspoon baking soda 3/4 cup crushed pineapple, drained 1 cup chopped nuts 1 cup raisins Heat oven to 375 degrees F. Grease a cookie sheet. Cream sugar, shortening and egg. Add zucchini and pineapple. Stir in dry ingredients; stir in nuts and raisins. Drop by rounded teaspoonsful onto cookie sheet. Bake for 15 minutes, or until no imprint is left when you press top of cookie lightly. These do not brown on top. While still warm, glaze with a thin confectioners' sugar, milk and vanilla extract frosting. woodseya1 Posted August 2, 2010 Share Posted August 2, 2010 Zucchini Chocolate Chip Cookies 1/2 cup butter or margarine 1 cup granulated sugar 1 egg, beaten 2 cups all-purpose flour, stirred before measuring 1/2 teaspoon salt 1 teaspoon soda 1 teaspoon cinnamon 1/2 teaspoon ground cloves 1 cup zucchini, peeled and grated 1 cup chocolate chips 1 cup chopped walnuts Heat oven to 350 degrees F. Cream margarine, sugar and beaten egg on high speed for 5 minutes. Sift flour, salt, baking soda and spices. Stir into batter. Add zucchini; mix well. Stir in chocolate chips and nuts. Graham cracker crumbs (1 pkg) 1 14 oz can sweetened condensed milk 1 6oz pkg chocolate chips semi-sweet 1 1/2 c. coconut 1 c. chopped walnuts Preheat oven to 350. In a 13 x 9 in baking pan, melt butter. Sprinkle crumbs over butter. Pour sweetened condensed milk over crumbs. Top evenly with remaining ing. Press down gently. I used: One boxed cake mix, choose flavor 1 stick butter, melted 2 eggs We did chocolate mix with choc chips. We also did yellow mix with mini cinnamon chips and a sprinkle of cinnamon sugar on top.
