Big Ag or Small Organic Farms?

Wouldn't it be better to be more responsible with food by raising the prices a bit and being more frugal with portions?  Better yet, grow your own, or preserve it so you can have a year-round supply of quality organic foods.  I won't stop buying these items, but I do look for organic, and I try to use every bit of it without being wasteful.
