Somebunny Posted November 27, 2013 Share Posted November 27, 2013 Double Date Oatmeal Cookies 2 sticks of butter 1 cup brown sugar 1/2 cup white sugar 2 eggs 1 tsp vanilla 1 tsp xanthan gum 1/2 c rice flour 1 cup soy flour 1 tsp baking soda 1 tsp cinnamon 1 cups quick oats 2 (8oz) packages chopped dates * Cream butter and both sugars together. Then add eggs and vanilla and combine well. Next add flour, baking soda and cinnamon. Finally add quick oats and fruit. Use a teaspoon to drop mix onto ungreased cookie sheet. Bake for 11 to 12 minutes at 350 degrees or until golden brown. Recipe makes 4 dozen. * I substituted 2 cups of fruitcake fruit that had been soaked in peach brandy. Somebunny Posted November 27, 2013 Author Share Posted November 27, 2013 Apple Rice Betty 1 cup honey 1/4 tsp cinnamon 1/4 tsp sea salt 1 c cooked rice 4 large tart apples, peeled, cored and thinly sliced 1/2 cup chopped walnuts 1/4 cup oil Preheat oven to 350 degrees. Grease 11 x 7 " baking dish. Mix honey with spices and salt. Place thin layer of rice in the dish. Add layer of apples and sprinkle with honey, spices and nuts. Somebunny Posted November 27, 2013 Author Share Posted November 27, 2013 Mayonnaise Cake 2 5/8 cup rice flour 1 1/2 cup sugar 3 tsp baking soda 6 tbsp. cocoa 1/2 tsp sea salt 1 1/2 cup mayonnaise 1 1/2 cup water Mix together and pour into 9 x 12" greased pan. Bake at 350 degrees until a toothpick comes out clean. While cake is baking make frosting. Pour frosting over cake while still warm. Frosting will become like fudge. Somebunny Posted November 27, 2013 Author Share Posted November 27, 2013 Rice Flour Muffins - makes 6 muffins 1/2 cup pureed banana 1/2 cup milk or water 1 cup rice flour 1/2 tsp sea salt 1 1/2 tsp baking powder 1 tbsp. margarine melted Preheat oven to 350 degrees. Grease 6 muffin tin. Stir banana into milk. Add dry ingredients and margarine. Mix until moistened. Fill the muffin cups two thirds full. Bake for 15 - 20 minutes. Somebunny Posted November 27, 2013 Author Share Posted November 27, 2013 Blueberry Delight Cookies 1/3 cup margarine 2/3 cup sugar 2 tbsp. milk 1 tsp vanilla 1/4 tsp sea salt 1/2 tsp baking powder 1 cup rice flour 1/4 cup unsweetened apple sauce 1/4 cup blueberries Preheat oven to 350 degrees. Cream margarine and sugar until fluffy. Add milk, vanilla and beat until smooth. Beat in remaining ingredients except blueberries. Fold in blueberries. Drop by teaspoon 2" apart onto cookie sheet. Somebunny Posted November 27, 2013 Author Share Posted November 27, 2013 Banana Bread 4 eggs 2 cup white sugar 1 cup oil 1 1/8 cup rice flour 1 1/2 tsp baking soda 1 1/2 tsp sea salt 3/4 tsp baking powder 1 tsp vanilla 3 bananas mashed Beat eggs, gradually beat in sugar, then oil. Mix dry ingredients together and add alternately with bananas. Bake in greased pans at 350 degrees for 55 minutes. It makes 2 bread loaf pans, or I use one bundt cake pan.
