    Frittata Primavera

    Keep this in mind; you do not have to use the vegetables or cheeses listed. You can toss in what you have, as long as you cook it before you add it. You can also add ham, bacon, the list can go on and on!  

     

    1 bunch asparagus (3/4 lb.), trimmed, cut into 1-inch pieces

    1/3 cup  chopped red peppers

    8 eggs

    2 Tbsp.  water

    1 tsp. salt

    4 oz.  (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cut into small cubes

     

    PREHEAT oven to 350

  2. Baked Cactus Chips

     

    5 Russet potatoes use the slicers on your grater to slice. A mandolin would work nicely, also.

    Pam Spray

    Olive Oil

    Salt

    Pepper

     

    Accoutrements: (whatever you have or want)

    Bacon (can use bacon bits)

    Cheese (can be fresh, cheese whiz sauce, or salsa con queso)

    Sour cream

    The list can go on and on!

     

    Spray a baking sheet with the Pam spray. Put your sliced potatoes on the tray, drizzle with olive oil, add salt, pepper, and toss. (Just a side note, I don't peel the potatoes, I like the taste of the skins) Put in a 350 oven for twenty minutes, then turn and cook for twenty more minutes. Toss and put under the broiler (my temp is 500) for 5 minutes, turn and repeat for another 5 minutes. Cool and add accompaniments. Enjoy!! As with all my recipes, you can eyeball and do what works for you. I use olive oil because it is a bit more heart healthy, but you can do what you have! You can also alter the temp, depending on the crisp that you want.  

  3. Bar-B-Que Chicken Pizza

     

    Ingredients:

    1/2 bar-b-q sauce (again, I use KC Masterpiece)

    3/4 - 1lb bonless chicken strips

    1) small -medium onion halved and sliced

    1/4 tsp garlic salt

    1 - 1 1/2 cups mozzarella cheese (or as much cheese as you like)

     

    Fry up chicken in a pan with the garlic salt. Make your pizza dough like you would for a normal pizza. I use the mix that you just add water. Spread out dough on a greased pizza pan. Spread on sauce in a nice even coat. Add the chicken and onion, spreading out evenly. Sprinkle on cheese. Bake as long as you would normally bake your pizza.

     

    This goes good with an ice cold beer or homemade root beer.

    I made this and it was terrific!! The only thing I did differently was I made and added bacon. It turned out super. I also used a sweet honey sauce, and I think I am going to use a tangier one next time. Thanks for the great idea Sparticus!!!

  4. Parmesan- Baked Salmon

     

    1/4 cup Mayonnaise

    2 Tbsp.  Grated Parmesan Cheese

    1/8 tsp. ground red pepper (cayenne)

    4   salmon fillets (1 lb.), skin removed

    2 tsp. lemon juice

    10   RITZ Crackers, crushed (about 1/2 cup crumbs)

    PREHEAT oven to 400

  5. I have a small indoor herb garden that I have just started to keep. I have had it for about 2 months and it is doing fairly well. However, I am having trouble with these small gnat- looking things. I am concerned that they are bad for the plants. I am really new to this, so is it normal (just annoying to me!) or do I have to do anything to get rid of them? Can I safely get rid of them safely? Thanks for the patients, but I don
